Healthy summer recipes are fantastically flavorful with bright flavors that bring on cravings as soon as the weather warms up. However, just because the word “salad” is mentioned at the top of a recipe card, it doesn’t necessarily mean that it’s diet friendly. After all, that macaroni salad loaded with mayo secretly contains a massive number of calories, fats and carbs that you might not have expected from something so seemingly innocent.
Fortunately, this time of year also brings healthy summer recipes that are bursting with fantastic flavors and textures but that will also help you to keep that beach body you’ve been working so hard to achieve.
Use the following tips to turn all your favorite healthy summer recipes into a meal high in fiber, low in calories and huge on taste.
Grilled eggplant, tomato and mozzarella – Stack rounds of grilled eggplant, slices of fresh tomato, and circles of mozzarella made with skim milk. Top it off with a few fresh basil leaves and a light drizzle of extra virgin olive oil and balsamic vinegar and you’ll not only have a beautiful plate, but an intensely flavorful one.
Macaroni salad – yes, it is possible to keep this old fave on the menu as long as you boost the fiber and nutrition. To do this, try swapping whole grain macaroni noodles for the standard ones you usually use. Instead of making a sauce based exclusively on mayo, add a tablespoon of low-fat mayo for consistency and add plain yogurt as the rest of the base (or, even better, Greek yogurt) with some chopped fresh dill. To boost the flavors, textures and fiber level, throw in some fresh chopped celery, carrot and onion.
Grilled fish tacos – the typical way to cook this recipe may be to deep fry it, but grilling can add an amazing flavor you’ll love even more. The taste of the smoke and char adds an entirely new component to fish you can wrap in whole grain tortillas. Add a freshly made homemade salsa or guacamole (or both!) and you’ll have an instant favorite on your hands.
Turkey burgers – you can still love burgers all summer long when you choose ground turkey topped with mango chutney. Serve with boiled-then-grilled baby red potatoes with the skins still on instead of French fries. To finish off the plate, add a few pieces of bell pepper that have been grilled until they caramelize.
